Chef Dustin Valette is owner of Valette, the Matheson, Roof 106, and Valette Wines. A graduate of the Culinary Institute of America at Hyde Park, Chef Valette began his career through his own stagiaire program at Charles Nob Hill, Fifth Floor, La Folie, Fleur De Lis, Gary Danko, and Aqua. He continued his journey working at Thomas Keller's Bouchon in Napa, Hokus at the Mandarin Oriental Hotel Honolulu, and at Aqua as executive sous chef under Laurent Manrique. After time in Europe, Valette opened and helmed his first kitchen as Executive Chef at VOX Restaurant & Wine Lounge in Nevada.
After six years as Executive Chef at Dry Creek Kitchen, Valette and his brother Aaron Garzini realized a long-time dream of opening their own restaurant, Valette in Healdsburg. Soon after, he established Valette Wines, whose 2021 Cabernet Sauvignon earned a perfect 100-point rating. In 2021, Valette transformed his great-grandfather’s bakery into the Michelin-recognized Matheson, along with the lounge Roof 106. In 2026, a new chapter will begin when the Valette Wine Lounge opens alongside the original Valette restaurant, seamlessly integrating food and wine experiences
